MAJOR DUTIES/FUNCTIONS/TASKS:

· Line Cook’s Primary Responsibility is to prepare menu dishes quickly and accurately according to specifications set by kitchen management

· Utilizes approved food production standards to ensure proper quality, safe serving, holding, and storage temperatures, and standardized portion control.

· Responsible for setting-up and maintaining a clean, organized, workstation while preparing sufficient mise-en-place and back-up product for a la carte restaurants and banquets.

· Responsible for cleaning work station at the end of each shift in accordance with specifications set by kitchen management

· Assures compliance with all food safety requirements and Health Department Jurisdictional standards— Valid Food Handlers Certificate Required www.servsafe.com

· Punctuality, attendance, and reliable transportation required

· Interacts professionally with other employees, members, and suppliers

· Performs quality work within deadlines with or without direct supervision

· Maintains professional personal appearance and personal hygiene in accordance with PGCC Handbook

QUALIFICATIONS:

· Culinary degree or at least 3 years working in a high volume restaurant kitchen, or similar working experience.

· Strong passion and motivation to create great food

· Ability to follow all The PGCC Handbook guidelines & safety standards.

· Regularly lift and/or move up to 25 pounds and may occasionally lift up to 50 pounds

· Must be available to work nights (until 9pm), weekends (Saturday, Sunday) and select Holidays

· Ability to follow instruction with minimal supervision

· Ability to follow written recipes with minimal supervision
